A chance to literally pig-out at this smokin’ whole hog BBQ showcase, from two of the south’s most legendary Pitmasters, Pat Martin and Sam Jones. East + West BBQ is a collaboration – not a competition, with each Pitmaster preparing a whole hog their style along with a variety of their signature sides from Martin’s Bar-B-Que Joint and Sam Jones Wood Fired, NC Whole Hog BBQ.
What makes their distinctive cooking styles so unique? Both use the same basic smoking process, so they describe it as major differences in the preparation and technique. Jones will be representing the east with his Eastern North Carolina style, which is a salted carcass, which results in a crispy exterior that is chopped very fine and according to Jones, “is a flavor explosion in your mouth”. And Martin’s style covers the endangered Western Tennessee style, using a “succulent rub” on his whole hog – and is pulled, not chopped. Of course, they both have perfected their own unique “special sauces” that complement their cooking styles.
Host chef Will Quinn is bringing up the south with his killer fried chicken, homemade biscuits, collards and dirty hoppin’ John. All, taking place with a relaxed poolside vibe at The Alida, presented by South Magazine.
The Savannah Food & Wine Festival is presented by the Tourism Leadership Council, a 501-(c) 6 organization, and The AdFish Group, with proceeds benefiting the TLC Scholarship Fund, with educational opportunities for hospitality program students in colleges and universities in the Coastal Empire and many local charitable organizations.
