Class TH2: The Magic of Salt & Liquid

Time: 12:00 PM - 1:15 PM

Location: Chef Darin's Kitchen Table

Address: 2514 Abercorn St, #140, Savannah GA

The craft of brining food is an ancient technique, one that actually helps dissolve some of the muscle fibers, which helps to reduce the toughness of meat. As the fibers unfold, liquid works its way in between these proteins so there is more water in between the meat proteins as the meat cooks. This results in a more tender cooked meat. Master Butcher, Michael Sullivan will demonstrate how to brine a turkey, and other cuts of meat and answer the age-old question of how much salt is really needed to use. Guests will get to taste test brined meats vs. non-brined meats, along with some fabulous wines!
