Master the many techniques behind preparing one of the Low Country’s most beloved ingredients – the fish!  Hilton Head Island’s own native son and chef, Clayton Rollison of the Lucky Rooster Kitchen + Bar, will take you from the market (or waters) to the kitchen as he shares what you need to look for in selecting your fish and which preparation best suits your daily catch once home.  From poaching to sautéing, grilling or roasting you’ll learn it all along with how to prepare a tasty garnish that pairs perfectly with any preparation.
